Easy – each pita is one serving – recipe below is for 2 pita pizzas
Have a pizza party! Set up the ingredients and allow your guests to make their own version of this tasty treat. It’ll be a hit!
2 pitas
extra virgin olive oil (enough to coat both sides of both pitas)
1 large clove of garlic – minced – or more if you love garlic
1 large tomato – sliced
1 thin slice of red onion – chopped
8 pitted kalamata olives – cut in half
4 oz feta cheese
1/3 c grated mozzarella cheese
Preheat your grill on high. Brush both sides of pitas with olive oil and grill one side for one minute until brown and toasty. Remove from grill and place grilled side up on board or plate. Add toppings on grilled side of pita in this order: garlic, tomato, red onion, olives, feta, and mozzarella (just enough to hold the ingredients together on the pita).
Turn grill down to low, place pizzas on grill, and heat until cheese is melted and bottom is browned. Cut into quarters…you’re gonna love it!
