Remember that old line from Hee Haw? Loved that segment, heard dish names that were totally new to me. Now that we live in the RV full time, dinners are smaller and easier to make. Here are some ideas for easy to make dinners, with just enough leftovers for lunch the next day.
Chicken Scampi with Angel Hair Pasta
2 Skinless Boneless chicken breasts
Tablespoon crushed garlic
2 Tbsp butter
2 Tbsp olive oil
¼ cup breadcrumbs
2 Tbsp white wine
4 Tbsp fresh grated parmesan cheese
Salt and pepper to taste
Slice chicken in ¼” slices, heat oil and butter in skillet. Add garlic, add chicken, sauté until chicken is opaque. Add the wine and cover, simmer for 10 minutes. Uncover and add bread crumbs, this will soak up the butter/oil. In the meantime, boil the pasta, drain and add the chicken and sauce, add a little olive oil for proper consistency if needed. Sprinkle parmesan cheese and serve.
All these meals are pretty easy and quick, they all have great yum factor, and if you are parked next to us, you will likely know when the scampi is cooking!
