Remember that old line from Hee Haw? Loved that segment, heard dish names that were totally new to me. Now that we live in the RV full time, dinners are smaller and easier to make. Here's an idea for an easy to make dinner, with just enough leftovers for lunch the next day.
Chicken Cheese Quesadillas
1 cup cooked shredded chicken
1 cup shredded cheese (I like the 4 cheese blend)
½ cup salsa
½ cup sour cream (sorry, can’t help myself)
4 flour tortillas
Combine the shredded chicken and the salsa. Spread mixture on half the tortilla and add the shredded cheese to cover. Fold the tortilla in half, heat on a griddle or in a sauté pan. Heat about 1 minute on bottom, then flip and cook about 2 minutes on other side. Remove and cut into wedges. Put on a tray and keep warm. Serve with (or without) the sour cream! Great to make ahead of time for the Rally Happy Hour!
Another variation, warm up some refried beans and add or use instead of the chicken salsa blend.
